Ingredients
  

Zucchini Base
  • 2 medium Zucchini sliced into rounds
  • 1 cup Shredded Mozzarella Cheese
  • ½ cup Parmesan Cheese grated
  • 1 large Egg beaten
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
Toppings
  • 1 cup Pizza Sauce store-bought or homemade
  • 1 cup Toppings of choice e.g., pepperoni, bell peppers, onions, olives

Method
 

Prepare Zucchini Base
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, beaten egg, Italian seasoning, garlic powder, salt, and pepper.
  3. Mix until well combined and form into a pizza shape on the prepared baking sheet.
Bake the Base
  1. Bake the zucchini base in the preheated oven for 15-20 minutes or until golden brown and firm.
Add Toppings
  1. Remove the zucchini base from the oven and spread pizza sauce over the top.
  2. Add your choice of toppings and sprinkle with additional cheese if desired.
  3. Return to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
Serve
  1. Allow to cool slightly before slicing and serving.
