Ingredients
  

Chicken Marinade
  • 4 pieces Chicken Breasts boneless and skinless
  • ¼ cup Olive Oil extra virgin
  • 2 tablespoons Balsamic Vinegar
  • 3 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
Vegetables
  • 1 cup Cherry Tomatoes halved
  • 1 cup Zucchini sliced
  • 1 cup Bell Pepper sliced
Garnish
  • ¼ cup Fresh Basil chopped
  • ¼ cup Parmesan Cheese grated

Method
 

Marinate Chicken
  1. In a bowl, combine olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Cook Chicken
  1. Heat a skillet over medium heat. Add marinated chicken breasts and cook for 6-7 minutes on each side until cooked through and golden brown.
Add Vegetables
  1. Add cherry tomatoes, zucchini, and bell pepper to the skillet. Cook for an additional 5-7 minutes until vegetables are tender.
Serve
  1. Remove from heat, garnish with fresh basil and grated Parmesan cheese. Serve warm.
