  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree
  • ½ cup honey or maple syrup
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, honey, applesauce, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
