Preparation & Air Frying
- Thoroughly wash and scrub the Russet potatoes under cold water. Pat them completely dry with a clean kitchen towel. Ensuring the skins are bone-dry is the vital secret to shatteringly crisp skin.
- Use the tines of a fork to prick each potato 6 to 8 times all over to allow internal steam to vent safely during cooking.
- Rub each potato generously with extra virgin olive oil until glossy, then massage coarse flaky sea salt all over so it adheres to the oiled skin.
- Place the potatoes in the air fryer basket in a single layer with space between them for rapid 360° convection airflow.
- Air fry at 400°F (200°C) for 35 to 45 minutes, turning them once at the 20-minute mark with heatproof silicone tongs. They are done when a fork slides into the center with zero resistance (internal temp 205°F / 96°C).
- Carefully transfer the hot potatoes to plates. Cut a slit down the top of each potato, then press the ends inward using a kitchen towel to pop the fluffy center open. Fluff gently with a fork.
- Immediately top with softened butter, cool sour cream, freshly shredded sharp cheddar cheese, and fresh chives. Season with cracked black pepper and serve hot!
