  • 5 cloves Fresh garlic Minced
  • 2 tablespoon Tomato paste Double concentrated for deep rich color
  • 1 can (28 oz) Crushed San Marzano tomatoes Or whole peeled tomatoes hand-crushed
  • 4 cups Low-sodium vegetable or chicken broth Halal certified
  • 1 teaspoon Dried Italian herb seasoning Oregano, thyme, rosemary blend
  • ½ teaspoon Crushed red pepper flakes Optional for subtle warming kick
  • 1 ¼ teaspoon Fine sea salt Adjust to taste
  • ½ teaspoon Freshly cracked black pepper
  • 1 teaspoon Pure maple syrup or organic sugar Balances tomato acidity naturally
Plump Tortellini & Velvety Cream Finish
  • 16 oz Refrigerated three-cheese tortellini Ricotta, parmesan, and romano filled
  • ¾ cup Heavy whipping cream Warmed to room temperature
  • ½ cup Parmesan cheese Freshly finely grated, plus extra for serving
  • 1 cup Fresh basil leaves Cut into thin ribbons (chiffonade)
  • 2 cups Fresh baby spinach Optional, gently wilted in at the end

Method

Sauté Aromatics & Build Deep Tomato Broth
  1. In a large heavy-bottomed Dutch oven or stockpot, heat the olive oil and butter over medium heat until sizzling gently.
  2. Add the diced onion (or shallots) and sauté for 4 to 5 minutes until soft and translucent. Stir in the minced garlic and cook for 1 minute until highly fragrant.
  3. Stir in the tomato paste and cook for 2 minutes, stirring constantly until it turns a deep rustic brick-red color (this caramelizes natural tomato sugars and removes raw acidity).
  4. Pour in the crushed San Marzano tomatoes and broth. Add Italian seasoning, crushed red pepper flakes, sea salt, black pepper, and maple syrup. Stir thoroughly to combine.
  5. Bring the soup to a lively simmer over medium-high heat. Reduce heat to medium-low, partially cover, and let simmer gently for 10 minutes to allow flavors to meld beautifully.
Cook Tortellini & Velvety Cream Finish
  1. Drop the refrigerated cheese tortellini directly into the simmering soup. Cook for 3 to 4 minutes (or according to package instructions) until the tortellini float to the surface and are tender al dente.
  2. Reduce heat to low. Slowly stream in the warm heavy cream while stirring gently. Stir in the grated parmesan cheese until completely melted and silky.
  3. Remove from heat immediately to prevent overcooking the delicate pasta. Stir in the fresh baby spinach (if using) and ribbons of fresh basil, letting them gently wilt in the warm soup for 1 minute.
  4. Ladle into wide warm soup bowls. Garnish with shaved parmesan flakes, additional fresh basil ribbons, and a drizzle of extra virgin olive oil. Serve immediately with warm crusty garlic bread!
