Method
Prep & Whisk the Buffalo Cheese Sauce
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch ceramic baking dish with olive oil or butter.
- In a large mixing bowl, beat the softened cream cheese, sour cream, melted butter, and buffalo pepper sauce together with an electric hand mixer or sturdy whisk until completely smooth and creamy.
- Stir in the minced garlic, garlic powder, onion powder, sea salt, black pepper, and half of the chopped scallions.
Combine Casserole & Transfer to Dish
- Fold in the shredded cooked chicken, steamed tender cauliflower florets, 1 cup of the shredded cheddar, and ½ cup of the mozzarella until thoroughly coated in the spicy cream sauce.
- Spread the mixture evenly into the prepared 9x13 baking dish, smoothing the top with a spatula.
Top With Cheese & Bake to Bubbly Perfection
- Evenly sprinkle the remaining ½ cup cheddar and ½ cup mozzarella over the top of the casserole.
- Bake uncovered at 375°F (190°C) for 20 to 25 minutes, until the casserole is bubbling vigorously around the edges and the cheese on top is completely melted and blistered with golden spots.
- Optional: Broil on HIGH for 2 minutes to achieve deeper golden brown blisters on the cheese.
- Remove from the oven, let rest for 5 minutes, then drizzle with cool creamy ranch and scatter remaining sliced green onions over top before serving hot!
