Method
Mix Dry & Wet Ingredients
- Preheat oven to 375°F (190°C). Grease an 8x8-inch or 9x9-inch ceramic baking dish with butter or coconut oil.
- In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, nutmeg, fine sea salt, and half of the sliced almonds. Toss until evenly distributed.
- In a separate medium bowl, whisk together the eggs, milk, pure maple syrup, melted butter (or coconut oil), and vanilla extract until completely smooth and emulsified.
Layer, Fold & Bake to Golden Perfection
- Scatter 1 cup of the fresh blueberries evenly across the bottom of the prepared baking dish.
- Pour the dry oat mixture over the blueberries in an even layer.
- Slowly and carefully pour the wet egg and milk custard evenly over the oats, ensuring all the oats are moistened and submerged. Gently tap the baking dish on the counter to settle the liquid.
- Scatter the remaining 1 cup of fresh blueberries and the remaining sliced almonds across the top surface.
- Bake uncovered at 375°F (190°C) for 35 to 40 minutes, until the top is golden brown, the edges are lightly crisp, the center is set, and the blueberries have burst into bubbling indigo pockets.
- Remove from the oven and let cool for 10 minutes to allow the custard to set into clean sliceable portions. Serve warm drizzled with pure maple syrup, a dollop of Greek yogurt, or a splash of cold cream!
