Butternut Squash Ravioli

Delicious homemade ravioli filled with a creamy butternut squash mixture, served with a sage butter sauce.

Ingredients
  

Pasta Dough
  • 2 cups All-Purpose Flour Plus extra for dusting
  • 3 large Eggs Room temperature
  • 1 pinch Salt
Filling
  • 1 medium Butternut Squash Peeled and cubed
  • 1 cup Ricotta Cheese
  • ¼ cup Parmesan Cheese Grated
  • 1 teaspoon Nutmeg Freshly grated
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
Sage Butter Sauce
  • ½ cup Unsalted Butter Cut into pieces
  • 10 leaves Fresh Sage Chopped
  • 1 pinch Salt

Method
 

Make the Pasta Dough
  1. In a mixing bowl, combine flour and salt. Make a well in the center and add eggs. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
Prepare the Filling
  1. Steam or boil the butternut squash until tender, about 15 minutes. Drain and mash until smooth.
  2. In a bowl, combine the mashed squash, ricotta, parmesan, nutmeg, salt, and pepper. Mix until well combined.
Assemble the Ravioli
  1. Roll out the pasta dough into thin sheets using a rolling pin.
  2. Place small mounds of filling on one sheet, then cover with another sheet of pasta. Cut out ravioli using a cutter and seal the edges.
Cook the Ravioli
  1. Bring a pot of salted water to a boil. Cook ravioli in batches for 3-4 minutes until they float to the surface.
  2. Remove with a slotted spoon and set aside.
Make the Sage Butter Sauce
  1. In a skillet, melt butter over medium heat. Add chopped sage and cook until the butter is golden and fragrant.
  2. Add the cooked ravioli to the skillet and toss to coat in the sauce. Season with salt.
Serve
  1. Plate the ravioli and garnish with additional parmesan and sage if desired.

Notes

For a richer flavor, you can add a splash of cream to the sage butter sauce.
