Brioche & Spiced Apple Layer
  • 1 loaf (approx. 14-16 oz) Rich brioche or challah bread cut into 1-inch cubes, slightly stale or toasted
  • 3 medium Honeycrisp or Granny Smith apples peeled, cored, and sliced into ¼-inch pieces
  • 2 tablespoon Unsalted butter melted
  • 2 tablespoon Light brown sugar for tossing with apples
  • 1 teaspoon Ground Ceylon cinnamon
Rich Vanilla Custard
  • 8 large Eggs room temperature
  • 2 cups Whole milk sub with half-and-half for extra richness
  • ½ cup Heavy whipping cream
  • ⅓ cup Pure maple syrup Grade A amber
  • 2 teaspoon Pure vanilla extract
  • 1.5 teaspoon Ground cinnamon
  • ¼ teaspoon Freshly grated nutmeg
  • ½ teaspoon Fine sea salt balances sweetness
Crispy Brown Sugar Streusel Topping
  • ½ cup Packed dark brown sugar
  • ½ cup All-purpose flour
  • ½ cup Rolled old-fashioned oats
  • 1 teaspoon Ground cinnamon
  • ½ cup (1 stick) Cold unsalted butter cubed into small pea-sized pieces
  • ⅓ cup Chopped pecans or walnuts optional, for nutty crunch
Garnish & Serving
  • 2 tablespoon Powdered confectioners sugar for dusting
  • ½ cup Warm pure maple syrup for drizzling at the table
  • ½ cup Fresh mixed berries raspberries and blueberries on the side

Method

Prepare the Baking Dish & Bread
  1. Generously butter a 9x13-inch ceramic baking dish. Arrange half of the cubed brioche bread across the bottom of the dish in an even layer.
Layer the Cinnamon Apples
  1. In a medium bowl, toss the sliced apples with 2 tablespoons melted butter, 2 tablespoons brown sugar, and 1 teaspoon cinnamon until thoroughly coated. Scatter the spiced apples evenly over the bread layer, then top with the remaining brioche cubes.
Whisk & Pour the Custard
  1. In a large bowl or glass pitcher, whisk together the eggs, whole milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and fine salt until silky smooth and completely emulsified. Slowly and evenly pour the custard over the entire casserole, gently pressing down on the bread cubes with a spatula so every piece absorbs the liquid. Let stand for 20 minutes at room temperature (or cover and chill overnight in the refrigerator for make-ahead convenience).
Mix the Streusel & Bake
  1. Preheat your oven to 350°F (175°C). In a small bowl, combine brown sugar, flour, oats, cinnamon, and chopped pecans. Cut in the cold cubed butter using a pastry cutter or your fingertips until crumbly, pea-sized clusters form. Scatter the streusel generously across the top of the soaked casserole.
  2. Bake uncovered for 45 to 50 minutes until the top is deeply golden, crispy, and the custard is set in the center (an inserted knife should come out clean without liquid custard). Tent loosely with aluminum foil during the last 10 minutes if the streusel browns too quickly.
Rest, Dust & Serve
  1. Let the casserole rest on a wire rack for 10 minutes to allow the custard to settle into clean sliceable portions. Dust with confectioners sugar, slice into generous squares, and serve warm with a generous drizzle of pure amber maple syrup!
