- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 2 cups low-sodium vegetable broth
- 2 tbsp olive oil
- 1 tsp dried basil (or fresh if available)

- Salt and pepper to taste
Instructions
- In a large pot over medium heat, drizzle olive oil and sauté the diced onion until translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
- Pour in the canned tomatoes (with juice) and crush them lightly with a wooden spoon.
- Add the vegetable broth, dried basil, and sugar. Stir well and bring to a simmer.
- After simmering for about 10 minutes, blend the soup using an immersion blender until smooth. For a chunky texture, blend less.
- Season with salt and pepper according to taste.
- Serve warm in bowls, garnishing with fresh basil if desired. Enjoy with crusty bread or grilled cheese.
