- 1 cup orzo pasta
- 1 pound Italian sausage (sweet or spicy)
- 1 cup bell peppers (diced, mixed red and yellow)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell peppers until tender, about 5 minutes.
- Remove veggies and add Italian sausage to the same skillet. Break apart as it cooks until browned, around 6 to 8 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add orzo and chicken broth; bring to a boil, then reduce heat and cover. Simmer until orzo is tender, about 10 minutes.
- Remove from heat and fold in Parmesan cheese until melted.
- Serve warm with extra cheese and crusty bread.
