- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes (oil-packed)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup fresh basil leaves
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish.
- Season chicken breasts with salt and pepper on both sides.
- In a skillet, heat olive oil over medium-high heat and sear chicken for 3 minutes on each side until golden brown.
- Remove chicken; add minced garlic to the skillet and sauté until fragrant (about 1 minute).
- Pour in heavy cream, then stir in sun-dried tomatoes and basil.
- Return chicken to skillet, spoon sauce over it, sprinkle with Parmesan cheese, and transfer to the preheated oven.
- Bake uncovered for 20-25 minutes until chicken reaches an internal temperature of at least 165°F (75°C). Meanwhile, cook pasta according to package instructions.
- Serve pasta topped with chicken and extra sauce; garnish with fresh basil or more Parmesan if desired.
