Instructions
- In a bowl, mix soy sauce, brown sugar, rice vinegar, and minced garlic; set aside.
- Heat oil in a large skillet over medium heat. Add chicken pieces and cook until golden brown (5-7 minutes).
- Stir in diced bell peppers and onion; cook until tender-crisp (about 5 minutes).
- Pour the sauce over the chicken and vegetables; stir well to coat.
- Simmer for an additional 5 minutes to meld flavors.
- Serve hot over steamed rice or noodles.
