Instructions
- Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Once hot, sauté minced garlic for about 30 seconds until fragrant.
- Add shrimp, season with salt and pepper, and cook until pink (about 3-4 minutes). Remove shrimp from the skillet.
- Stir in fresh spinach and cook until wilted (about 1 minute).
- Pour in heavy cream, simmer for about 3 minutes until slightly thickened, then stir in grated Parmesan cheese until melted.
- Add cooked fettuccine to the skillet, tossing everything together until coated in the creamy sauce.
- Serve immediately, garnishing with additional Parmesan if desired.
