- 3-4 medium overripe bananas (about 1 ½ cups mashed)

- ¾ cup granulated sugar
- 1 tsp baking soda

- 2 large eggs
- ½ cup melted butter (or vegetable oil)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the bananas until smooth, leaving some chunks if desired.
- Mix in melted butter, sugar, eggs, and vanilla extract until combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients without overmixing.
- Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
- Let cool for ten minutes in the pan before transferring to a wire rack. Slice thickly and enjoy!
