- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper. In a skillet over medium heat, heat olive oil until hot but not smoking. Add the chicken and cook for about 6 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, sauté minced garlic for about 1 minute until fragrant, then add fresh spinach and stir until wilted (about 3 minutes).
- Pour in chicken broth and lemon juice, stirring well while scraping up any bits from the bottom of the pan.
- Return the chicken to the skillet, sprinkle with Parmesan cheese, then transfer everything to your preheated oven.
- Bake for approximately 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Allow to rest for 5 minutes before serving.
