- 6 slices thick-cut bacon
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 2 sprigs fresh thyme or rosemary
- 2 tbsp honey
- 1 tbsp Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper.
- In a skillet over medium heat, cook the bacon until crispy. Remove it from the pan and crumble it once cooled.
- In the remaining bacon grease, sauté minced garlic until fragrant (about 1 minute).
- Stir in honey and Dijon mustard until bubbly.
- Place seasoned chicken breasts in the baking dish, top with crumbled bacon, and drizzle the sauce over everything.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
