- 4 boneless, skinless chicken breasts (1 lb)
- 1 pound fresh gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- 3 cloves garlic (minced)
- 2 cups low-sodium chicken broth
- 1 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken for about 6 minutes on each side until golden brown. Remove from skillet and let rest.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute).
- Add chicken broth and bring to a gentle simmer. Slowly whisk in heavy cream and scrape the pan for flavorful bits.
- Add gnocchi to simmering sauce; cook according to package instructions until they float (about 2 minutes).
- Stir in fresh spinach until wilted, then add grated Parmesan cheese until melted.
- Slice rested chicken into bite-sized pieces and fold into the gnocchi mixture. Cook on low heat for an additional couple of minutes.
- Serve hot, garnished with extra Parmesan if desired.
