- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- 16 oz Philadelphia cream cheese, softened
- 1 cup sour cream
- 1 cup heavy whipping cream, chilled
- 2 ripe bananas, sliced
- 2 tsp vanilla extract
- 1 tsp unflavored gelatin powder mixed with 2 tbsp cold water
Instructions
- Preheat your oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a springform pan and bake for 10 minutes until golden. Let cool.
- Beat softened cream cheese until smooth; gradually add sugar. Mix in sour cream and vanilla extract. Gently fold in banana slices.
- Bloom gelatin by sprinkling it over cold water for five minutes, then heat until dissolved. Cool slightly and fold into the cheesecake mixture.
- Pour the cheesecake filling over the cooled crust and refrigerate for at least four hours or overnight to set.
- Whip heavy cream until soft peaks form; gently fold into the cooled gelatin mixture and spread over the cheesecake layer.
- Chill for another hour before serving. Top with additional banana slices if desired.
