Instructions
- In a large pot over medium-high heat, brown the Italian sausage for about 5 minutes.
- Add the chopped onion, carrots, and celery; sauté until softened (about 5 minutes).
- Stir in the minced garlic and cook for another minute.
- Pour in the diced tomatoes and vegetable broth; bring to a gentle simmer.
- Season with Italian seasoning, salt, and pepper; let simmer for about 10 minutes.
- Add spinach or kale during the last few minutes of cooking until wilted.
- Serve hot with crusty bread for dipping.
