Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together whole wheat flour, oats, baking soda, and brown sugar until well combined.
- In another bowl, mix melted coconut oil with the egg until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined. Fold in dark chocolate chips.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes or until edges are lightly browned but centers remain soft. Let cool slightly before serving.
