Instructions
- Sear the meat in olive oil until browned on all sides.

- Deglaze with red wine, scraping up browned bits.
- Return meat to the pot; add beef stock and seasonings.
- Cover and simmer on low heat for about 2 hours or until tender.
- Remove bay leaves before serving and enjoy hot.
