- 2 cups cauliflower florets
- 1 can (15 oz) low-sodium chickpeas, drained and rinsed
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/4 cup cilantro leaves, chopped
- 4 whole wheat or corn tortillas
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cauliflower florets and chickpeas. Drizzle with olive oil, lime juice, chili powder, salt, and pepper; mix until evenly coated.
- Spread the mixture on the baking sheet in a single layer. Roast for 25-30 minutes until golden brown and crispy.
- Warm tortillas in a skillet or microwave briefly until pliable.
- On each tortilla, add roasted cauliflower-chickpea mixture and top with cilantro.
- Roll up tightly and serve with extra lime wedges.
