Ingredients
- 1 can full-fat coconut milk
- 2 tablespoons red or green curry paste
- 4 cups low-sodium vegetable broth
- 2 cups mixed fresh vegetables (bell peppers, carrots, snow peas)
- 1 cup protein (chicken, shrimp, or tofu)
- Fresh cilantro and basil for garnish
Instructions
- Chop all vegetables and cube the protein.
- In a large pot over medium heat, sauté minced garlic and chopped onions in oil until fragrant.
- Add chopped vegetables and a pinch of salt; sauté for about 5 minutes.
- Pour in vegetable broth and coconut milk; stir in curry paste to taste.
- Add your chosen protein; cook for an additional 5-7 minutes until fully cooked.
- Remove from heat; serve hot garnished with fresh herbs.
