Instructions
- Rinse jasmine rice until water runs clear; cook in a saucepan with water (1 cup rice to 1.5 cups water) for about 15 minutes.
- Season chicken with chili powder, salt, and pepper; cook in olive oil over medium-high heat until golden brown (6 minutes per side).
- Sauté corn in the same skillet for about 5 minutes until charred.
- Mix sour cream with lime juice for the sauce.
- Fluff cooked rice, layer with sliced chicken and sautéed corn, drizzle with sauce, and garnish with cilantro.
Notes
For added flavor, marinate chicken overnight in lime juice and spices.
Substitute Greek yogurt for sour cream if desired.
