Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Halve the fresh tomatoes, quarter the onion, and place them on the baking sheet with whole garlic cloves.
- Drizzle with olive oil, season with salt and pepper, then roast for 25-30 minutes until caramelized.
- Transfer the roasted vegetables to a blender, add fresh basil leaves and vegetable broth, then blend until smooth.
- Pour the mixture into a pot over medium heat and simmer for 5 minutes before serving warm.
