Ingredients
- 1.5 lbs boneless skinless chicken thighs
- 1 can (13.5 oz) full-fat coconut milk
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- Salt and pepper to taste
Instructions
- Chop onions, mince garlic, and grate ginger; set aside.
- Sauté onions in a skillet until translucent, then add garlic and ginger until fragrant.
- Transfer sautéed mixture to the crockpot; add chicken thighs, diced tomatoes, curry powder, salt, pepper, and coconut milk. Stir well.
- Cover and cook on low for 6 hours or high for 4 hours until chicken is tender.
- Shred the chicken with two forks and stir it back into the sauce.
- Serve warm over rice or naan; garnish with cilantro if desired.
