- 3-4 boneless, skinless chicken breasts
- 1 medium onion
- 3 cloves fresh garlic
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 cup enchilada sauce
- Optional toppings: cheese, cilantro, sour cream
Instructions
- In a large pot, heat oil over medium heat; sauté diced onion until translucent. Add minced garlic and cook until fragrant.
- Add chicken breasts, season with salt and pepper, and pour enough chicken broth to cover the chicken completely. Bring to a boil.
- Once cooked (15-20 minutes), remove chicken and shred it using two forks; return to the pot.
- Stir in diced tomatoes and enchilada sauce; simmer on low heat for 10 minutes.
- For creaminess, mix in sour cream or cream cheese until smooth.
- Serve hot with your choice of toppings.
