Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 cups finely grated carrots
- 3 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat oven to 375°F (190°C). Line and grease a jelly roll pan with parchment paper.
- In one bowl, mix flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk eggs and vanilla; combine with dry ingredients.
- Gently fold in grated carrots until just mixed.
- Spread batter evenly into the pan and bake for 12-15 minutes until golden.
- Cool slightly then roll the cake in a kitchen towel dusted with powdered sugar.
- For the filling, beat cream cheese and powdered sugar until smooth. Once the cake cools completely, unroll it gently, spread filling over it, then roll back up without the towel.
