Instructions
- Sauté the onion in olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for an additional minute.
- Stir in chopped broccoli and vegetable broth; bring to a boil. Reduce heat and simmer until broccoli is tender (about 10 minutes).
- Blend the mixture until smooth using an immersion blender or regular blender.
- Return the blended soup to medium heat. Stir in heavy cream and shredded cheddar cheese until melted.
- Season with salt and pepper to taste. Serve hot, garnished with extra cheddar cheese if desired.
