  • Total Time: 30 minutes
  • Yield: Serves 6

Ingredients

Scale
  • 8 oz fusilli or rotini pasta
  • 1 lb shrimp (peeled and deveined)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • ½ cup red bell pepper (diced)
  • ¼ cup red onion (finely chopped)
  • ¼ cup fresh parsley (chopped)
  • ½ cup olive oil
  • 3 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a skillet, sauté shrimp over medium heat for about 3-4 minutes until pink and opaque. Let cool.
  3. In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  4. In another bowl, whisk together olive oil, lemon juice, salt, and pepper; pour over the salad.
  5. Toss gently until combined. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, consider marinating the shrimp in garlic or herbs before cooking.
Substitute other seafood like crab meat or scallops for variety.
Fresh basil or dill can be used instead of parsley for different herb profiles.
