- 3-4 boneless skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- Fresh vegetables (bell peppers, onions)
- 2 tablespoons olive oil
- Spices (garlic powder, paprika, salt, pepper)
Instructions
- Preheat oven to 400°F (200°C).
- Spray a large baking dish with nonstick cooking spray.
- Season chicken with salt, pepper, garlic powder, and paprika.
- Sauté chopped onions and bell peppers in olive oil until tender.
- Spread uncooked rice in the baking dish; pour in chicken broth and add sautéed vegetables.
- Place seasoned chicken on top and cover with aluminum foil.
- Bake for 30-35 minutes; remove foil for the last few minutes to brown the chicken.
Notes
For added flavor, marinate the chicken overnight.
You can substitute brown rice but increase liquid and baking time accordingly.
