- 4 large eggs
- 1 cup bell peppers, finely chopped
- 1 cup fresh spinach, roughly chopped
- ½ cup grated cheddar or feta cheese
- Salt and pepper, to taste
- 1 tsp olive oil
Instructions
- Wash and chop the bell peppers and spinach. Grate the cheese.
- In a bowl, whisk together the eggs with a pinch of salt and pepper.
- Heat a nonstick skillet over medium heat with olive oil. Add bell peppers and sauté for about 3 minutes until softened; then add spinach until wilted.
- Pour the whisked eggs into the skillet over the veggies. Stir gently until they start to set but remain slightly runny (about 2 minutes).
- Sprinkle cheese over the eggs and stir until melted and combined.
- Transfer to plates; garnish with additional pepper if desired.
