Ingredients
- 3-4 boneless skinless chicken breasts
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 cup long-grain white rice
- 4 cups low-sodium chicken broth
- 1 cup cream or half-and-half
Instructions
- Dice the onion, carrots, celery, and mince the garlic.
- In a large pot over medium heat, sauté the onion in olive oil until translucent. Add garlic, carrots, and celery; cook until softened.
- Add chicken breasts; season with salt and pepper. Brown on both sides.
- Pour in chicken broth; scrape up brown bits. Bring to a boil. Stir in rice; reduce heat and simmer for 20 minutes.
- Remove chicken; shred it and return to the pot along with cream. Simmer for an additional 5 minutes.
Notes
