- 3-4 boneless, skinless chicken breasts (about 1 lb)
- 2 medium carrots, chopped
- 1 cup green beans, chopped (fresh or frozen)
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 1 sheet puff pastry (thawed)
- 2 tsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Spray a 9x13-inch baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
- In a large skillet over medium heat, heat olive oil. Sauté onions until translucent (about 5 minutes), then add carrots and green beans; cook until softened.
- Add seasoned chicken breasts to the skillet and pour in enough chicken broth to cover halfway. Sprinkle garlic powder and thyme; stir gently.
- Roll out puff pastry on a floured surface to fit your baking dish, then drape it over the skillet mixture.
- Bake for 25–30 minutes or until the pastry is golden brown.
