Ingredients
- 4 skinless salmon fillets
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup oil-packed sun-dried tomatoes, chopped
- 3–4 garlic cloves, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Olive oil for cooking
Instructions
- Rinse and pat dry the salmon fillets.
- In a skillet over medium-high heat, add olive oil and sear salmon for 4 minutes on each side until golden brown. Remove and set aside.
- Sauté minced garlic in the same skillet until fragrant; add spinach and cook until wilted.
- Pour in heavy cream, stir in sun-dried tomatoes and herbs; simmer until slightly thickened.
- Return salmon to the skillet to warm through for 2 minutes.
- Serve with extra sauce drizzled on top.
