  • 1/2 cup whole milk or heavy cream
  • Salt and pepper to taste

Instructions

  1. Boil the Potatoes: Peel and chop potatoes into even chunks. Place in a large pot of salted cold water; bring to a boil over medium-high heat. Cook until fork-tender, about 15-20 minutes.
  2. Sauté the Greens: While potatoes cook, rinse and chop kale or cabbage. In another pot, melt 1 tablespoon of butter over medium heat. Add greens and scallions; sauté until wilted but bright green, about 5 minutes.
  3. Mash the Potatoes: Drain cooked potatoes and return to the pot. Add 3 tablespoons of butter and milk (or cream). Mash until smooth but slightly rustic if desired.
  4. Combine: Fold sautéed greens and scallions into the potato mixture. Season generously with salt and pepper to taste.
  5. Serve: Transfer colcannon to a serving bowl. Create a small well in the center and place an extra pat of butter for indulgence.
