- 3-4 boneless, skinless chicken breasts (1.5 lbs)
- 3 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 8 cups low-sodium chicken broth
- 2 cups egg noodles
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Chop carrots, celery, onion, and garlic into bite-sized pieces.
- Place chicken breasts at the bottom of the crockpot and layer with chopped veggies and minced garlic.
- Pour in chicken broth until all ingredients are submerged.
- Season with dried thyme, salt, and pepper; stir gently to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it using two forks, and return it to the pot with egg noodles.
- Cook on high for an additional 30 minutes or until noodles are tender.
