- 2 cups all-purpose flour

Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat the vegetable oil and eggs until smooth. Gradually add to the dry ingredients, mixing until just combined.
- Fold in the grated carrots.
- Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cakes cool before frosting with cream cheese frosting.
