- 1 lb large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp freshly ground black pepper
- 1 tsp kosher salt
- 2 green onions, sliced
- 1/4 cup low-sodium soy sauce
- Vegetable oil for frying
Instructions
- Rinse shrimp under cold water and pat dry with paper towels.
- In a bowl, mix cornstarch, garlic powder, black pepper, and salt. Coat shrimp evenly.
- Heat vegetable oil in a skillet to about 350°F (175°C).
- Fry the shrimp in batches for 2-3 minutes until golden brown. Drain on paper towels.
- Sauté green onions in residual oil for about 30 seconds.
- Add fried shrimp back to the pan with soy sauce; stir-fry for another minute.
- Serve immediately.

For extra spice, increase black pepper or add chili flakes.
