Ingredients
- 3-4 boneless, skinless chicken breasts
- 2 cloves fresh garlic
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup low-sodium chicken broth
- 2 tablespoons extra virgin olive oil
- 2 tablespoons capers
Instructions
- Pound chicken breasts to an even thickness (about 1/2 inch) between plastic wrap.
- Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side until golden brown; remove from skillet.
- In the same skillet, sauté minced garlic for one minute. Add lemon juice and chicken broth; scrape up brown bits.
- Stir in capers and simmer for 3 minutes until slightly thickened.
- Return chicken to the skillet and coat with sauce. Warm through before serving.
Notes
For added flavor, marinate the chicken in lemon juice and herbs for at least 30 minutes before cooking.
Serve with crusty bread or over pasta to soak up the delicious sauce.
