Ingredients
- 2-3 pounds boneless chicken thighs
- 2 tablespoons Jamaican curry powder
- 1 can (13.5 oz) full-fat coconut milk
- 4 cloves garlic, minced
- Juice of 1 lime
Instructions
- Marinate chicken thighs with lime juice and 1 tablespoon of curry powder; refrigerate for at least 1 hour.
- Heat oil in a skillet over medium heat, sauté garlic until fragrant.
- Add marinated chicken, browning on all sides.
- Stir in remaining curry powder and coconut milk; simmer gently.
- Cover and cook on low heat for about 30 minutes until chicken is tender.
- Serve with rice or roti.
