- 3 ripe bananas
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 cup unsalted butter (softened)
- 1 cup brown sugar (for caramel)
- 1/2 cup heavy cream (for caramel)
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- Mash ripe bananas until smooth, then mix in sugar and softened butter.
- In another bowl, whisk flour and baking powder, then gradually combine with the banana mixture.
- Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
- For caramel filling: Combine brown sugar and heavy cream in a saucepan over medium heat, stirring until thickened (about 5 minutes).
- Allow cakes to cool, layer with half of the caramel filling in between, and drizzle remaining caramel on top.
