- 4 bone-in chicken thighs
- 1/4 cup pomegranate molasses
- 4 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp honey
- Juice of 1 lemon
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
- In a bowl, whisk together pomegranate molasses, minced garlic, honey, lemon juice, salt, and pepper until combined.
- Place chicken thighs in a resealable bag or bowl and pour the marinade over them. Seal tightly and marinate in the fridge for at least 1 hour.
- Arrange marinated chicken in the prepared baking dish and drizzle with any remaining marinade. Roast for 35-40 minutes until golden brown.
- Check doneness with a meat thermometer (internal temperature should reach 165°F or 74°C) before serving hot.
