- 1 cup BBQ sauce
- 2 medium sweet potatoes (about 1 lb), diced

Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss diced sweet potatoes with olive oil, salt, and pepper in a bowl. Spread on the prepared baking sheet.
- Roast sweet potatoes for 25-30 minutes, flipping halfway through for even caramelization.
- Season chicken breasts with salt and pepper. Grill over medium-high heat for 6-7 minutes per side, basting with BBQ sauce in the last few minutes.
- Once cooked, slice chicken into strips and assemble bowls: start with roasted sweet potatoes, then add grilled chicken strips.
- Drizzle additional BBQ sauce on top and sprinkle fresh parsley before serving.
